Boot it up, put in a sim card, plug it in (it's at 70% so it doesn't need to be plugged in immediately), sign in to wifi, sign in to my Google account. You can setup a fingerprint if you want.

Deny permission for most of the things it asks about (may we track location, etc; may Google Assistant track your location, etc). You can turn these on later from Settings if you want (on the initial permissions screen, if you click on the text for any permission, a box pops up that tells you where in Settings to find it).

For me there was a notification that Google Play Services needs to be updated, update it.

the first time you use the keyboard on the phone, it'll ask if you want to send keystrokes to Google. No.

sound: also vibrate for calls: yes phone ringtone: upload desired ringtone (note: to access/copy/export/transfer default/system ringtones from an old android phone, from a shell on your computer do "adb pull system/media/audio"; to load onto a new phone, send the .ogg file to yourself in an email attachment, download the attachment, open it with ES File Explorer, play it with ES Media Player, in the ... menu Set as Ringtone (after you select that, you'll have a choice between ringtone, notification, alarm). Could also use Ringdroid. default notification ringtone: off/none other sounds: all off

Setting->Developer options->automatic system updates->off : i was once in a sticky situation where i was traveling, at a train station i didn't know, everything had been rerouted due to construction, and i was about to miss the last train, and my phone was almost out of batteries so i had shut it down while i was traveling to the station and turned it back on when i needed it at the station to get directions, and then it automatically installed an update and took forever to reboot (also consuming more battery power than usual, i assume). So, i don't think automatic updates is a good idea.
